Sensus introduces variety into diets
 
With Frutafit® Inulin, Sensus enables manufacturers to develop foods that can be used in low calorie and/or low carbohydrate diets. Sensus can therefore help increase the range of foods that dieting consumers can choose. Pastries, for example, are traditionally rich in carbohydrates but can now feature on low carbohydrate menus if the flour and/or sugar is replaced with low calorie Frutafit® Inulin.

The problems of obesity and its consequences in North America are well known and they are becoming more common in Europe. Hundreds of diets are available for people who wish to lose weight. The low carbohydrate Atkins diet, for example, is currently all the rage. In North America it has even led to an explosive growth in demand for high protein products such as eggs and a sharp fall in demand for high carbohydrate products such as bread.

Dieters are expected to change their lifestyles and eating habits. They have to take care when shopping: many proteins, few carbohydrates and a minimum of calories. Breakfast is different without bread and pizzas are no longer on the menu.

Frutafit® Inulin can replace the carbohydrates (such as flour and sugar) used in pastries and other foods. The use of Frutafit® Inulin in bread, cakes, biscuits and pizza bases does not reduce the efficiency of industrial or artisan production processes or impair the structure and texture of the end product. Consumers and the food industry are increasingly recognising the benefits of inulin. It is a natural, low calorie food fibre that can be used successfully in many commercial products.

Cut the carbs
There is nothing wrong with carbohydrates. They give us the energy we need. But people watching their weight or dieting for any other reason will benefit from reducing their intake of carbohydrates.

The principle behind a low carbohydrate diet is simple. Carbohydrates break down into simple sugars that raise the blood sugar level. This in turn stimulates the insulin hormone, which converts the sugar into the energy we need to fuel our muscles. The conversion reduces the blood sugar level, thus triggering our appetites and restarting the whole cycle once again. If there is too much sugar in the blood, the excess is stored as fat, which can lead to an increase in weight.

Low carbohydrate diets are designed to stabilise the blood sugar level so that less insulin is produced and our desire to eat is weakened.

Protein versus food fibre
Most low carbohydrate diets include proteins such as soya to reduce the amount of carbohydrate. The food fibre Frutafit® Inulin has a big advantage over proteins. A high intake of proteins triggers a process known as gluconeogenesis. In this process 40% of the proteins are converted into glucose, which again raises the blood sugar level. A food fibre is immune to this process and therefore contributes to the stability of the blood sugar level.

Foods that contain Frutafit® Inulin are suitable for many other diets, such as the Weight Watchers Diet, which awards points for calories, fat and fibres. Frutafit® Inulin is low in calories and high in fibre.
